- 2-3 Zucchini
- 1 lemon
- olive oil
- oregano
- salt and pepper
- onion
2) Peel and slice zucchini.
3) Cut two lemon slices from the center of the lemon, cut those in half. Put aside.
4) Saute onion in olive oil until transparent.
5) Add sliced zucchini to onion. Add the lemon slices. Squeeze the lemon halves you have left over the whole thing. Sprinkle oregano, salt & pepper over everything.
6) Cover and cook on low heat, stirring occasionally until zucchini starts to look more like a cucumber (center becomes more transparent)
